Chicken Burrito

    Looking for something satisfying that hits that craving for grilled onions, peppers, and chicken all wrapped up in one place? Loaded with onion, bell pepper, a splash of lime and the gooey cheese, it's hard to go wrong with this one. But you don't have to worry about the nutrition content, because it's loaded with as much protein as flavor, so dive in and enjoy.

    Serving size: 4 burritos


    1 lb chicken cut in small chunks

    1 cup brown Basmati rice

    1 bell pepper chopped

    1/2 yellow onion diced

    1 lime

    4 whole wheat tortillas

    4 oz shredded cheddar cheese

    1 TBSP Cumin

    2 tsp Oregano


    In saucepan, cook rice according to package directions.

    In large pan brown chicken. Once chicken is browned, add onion, bell pepper, cumin and oregano.

    Warm the tortillas on low heat in oven.

    Fill each tortilla with chicken and veggie mixture and rice. Top with 1 oz of cheese and spritz with lime juice.
