Chicken Kabobs


I am always shocked when people tell me they think eating healthy is boring. I beg to differ that it is anything but. Often eating healthy is eating many of the same things you typically eat, but using different ingredients and changing the way you cook. In my opinion I think healthy can taste far better than junk food. So the next time you are craving something from the grill or are hosting a backyard party, use this recipe and get everyone excited over some healthy food.


I love when I tell people that eating healthy doesn't have to be bland, and you don't always have to eat the same thing day in and day out. Spice it up, flavor it up, and get creative. Food is only boring if we make it that way, and with such a variety of healthy options out there, boring just doesn't even need to be on the menu.


Kabobs are also fun to make with someone, so whether you have your friends over, or are trying to cook with your significant other, these are a great easy way to start off. They say love starts in the kitchen, so why not give it a try and see what happens.


Grilling is such a great way to cook, it's hard to get a better full flavor taste than from food cooked right off the grill, and right now with so many things shut down, there is no better time to try your hand at the grill and cook up some new recipes that will tantalize the taste buds.


In the recipe I use zucchinis, tomatoes, and onion, but feel free to do your own take on the veggies and use those of your own personal choosing. Get creative, and get cooking.


So fire up the charcoal or the propane or whatever it is you prefer to cook with and get going. Summer won't last forever.


Kabobs are not only fun but they are delicious, and so dang easy to make! It doesn't take long to prepare or cook

Makes 4 Servings


Ingredients:

4 chicken breasts

2 zucchinis

3 tomatoes

1 yellow onion

4 TBSP olive oil

1 TBSP Paprika

1 TBSP garlic powder

1 tsp pepper

1 tsp salt

For brine:

4 cups water

1/2 salt


Directions:

In large bowl mix warm water and salt to make a brine then soak the chicken breasts for at least 15 minutes.


Once chicken has sat in brine, cut in chunks. Cut zucchini, tomatoes, and onion into small chunks then place on skewer in alternating fashion.


In bowl combine olive oil, paprika, salt, pepper, and garlic powder. Mix well, then with basting brush, rub the mixture of all of the kabobs.


Cook on grill until chicken is cooked thoroughly or place in oven and cook for 20 - 30 minutes at 450 F. If using wooden skewers soak in water before grilling or baking.
