Chicken Tortilla Soup Recipe


The delicious flavors of chicken tortilla soup are hard to beat. Which is why I absolutely love this recipe. Here's what you need:


4 - boneless skinless chicken breasts diced

1 - 28oz can of crushed tomatoes

1 - 15oz can of yellow corn

1 - 15 oz can of black beans

4 - zucchini diced

6 - 8 carrots diced

1 - bunch of celery diced

1 lime

1 small yellow onion diced

3 TBSP Cumin

Salt to taste

Ground Pepper to taste

1 - Avocado for garnishing

Cilantro for garnishing


In 4 quart pan brown the chicken and onion. Once browned add the rest of the ingredients and squeeze the lime juice in. Add water until pot is full. Bring to boil and simmer for 30 minutes.
