Makes approximately 6 servings
1 large tomato
1 purple onion
3 garlic cloves
2 tsp kosher salt
1/2 tsp pepper
1 bunch of cilantro
Peel and pit the 3 avocados and place in large mixing bowl and mash.
Dice one quarter of a yellow onion and add to bowl.
Dice the tomato and add to bowl.
Mince the garlic cloves and add to bowl.
Squeeze both limes into bowl, add kosher salt, pepper and mix well.
Chop about 1/3 of cilantro bunch very finely and stir into mixture.
Chill for one hour and serve.
