Potato Soup




Potato soup can be super fulfilling either as a side to your full meal or as a meal in and of itself.


So here is a great recipe to hit that craving.


Makes 6 servings


Ingredients:

12 small red potatoes diced

3 boneless skinless chicken breasts diced

2 cups 1% milk

1 yellow onion diced

4 garlic cloves minced

16 ounces chicken broth

2 tsp pepper

2 tsp salt

1 bunch of cilantro chopped


Directions:

In large pot cook chicken and onion. Cook chicken until browned.


In blender blend together milk and potatoes until slightly chunky. Once blended pour into pot.


Add all the remaining ingredients. Add water to fill pot completely. Bring to boil then reduce heat and simmer for 30 minutes.
