Salmon Pilaf

Makes 4 Servings


4 Salmon Fillets

2 Heads Broccoli

1 Cup Jasmine Rice

4 Cloves Garlic (minced)

4 TBSP lemon juice

1/4 tsp salt

1/2 tsp pepper

1 TBSP Dijon mustard

3 TBSP cooking wine

1 TBSP honey


In saucepan bring 1 and 1/2 cups of water to boil. Add rice, cover and reduce heat to simmer.

In separate saucepan, combine lemon juice, cooking wine, garlic, lemon juice, salt, pepper, and honey. Simmer on low heat.

Place the salmon fillets on a baking pan and cook in oven at 425 F. for 10 - 20 minutes. Flipping fillets once. After flipping the fillets, baste the top with some of the mixture from above.

While all that is cooking, bring water to boil in pot and cook broccoli for 5 minutes.

Once everything is cooked, create a bed of rice, lay a salmon filet over it and add broccoli.

Drizzle sauce over everything.
